Bean Salad with Artichoke Recipes

Ingredients : |

green beans
red capsicum
butter beans, drained and washed
artichoke hearts, cut in halves
olive oil
vinegar |
Method :
- Cut tops and tails off beans.
- Cook beans in 2cm of boiling water for 2 minutes, drain, run
cold water over beans to cool.
- Cut capsicum into very fine strips and place in a dish of ice
water for 20 minutes, or until curled.
- Toss together beans, butter beans, artichokes and capsicum, pour
over combined olive oil and vinegar.
