Method :
- Soak each type of bean separately
in cold water overnight.
- Drain well and rinse in cold
water.
- Drain and put the beans in a large
pan.
- Cover with cold water, bring to
the boil and boil for 10 minutes.
- Cover and simmer for 1 hour until
the beans are tender but unbroken.
- Drain well.
- Chop the onions, carrots and
celery finely.
- Crush the garlic.
- Melt the butter and cook the
vegetables until soft and golden.
- Add the tomatoes and their juice,
stock, wine, tomato purée, Worcestershire sauce, salt and pepper.
- Bring to the boil, cover and
simmer for 20 minutes.
- Remove the herbs.
- Add the beans and simmer for 10
minutes.
- Serve hot sprinkled with Parmesan
cheese.
