Groat and Cucumber Salad Recipes

Ingredients : |
3 tbsp
cracked wheat
2 tbsp
chives, chopped
2 tbsp
mint, chopped
1 red
capsicum, sliced
1 lemon
1 cucumber |
Method :
- Soak the wheat in water for an
hour, then drain and squeeze out the excess water.
- Place on a salad plate with finely
chopped chives and mint and sliced capsicum.
- Squeeze the juice from the lemon
and pour over the salad.
- Marinate for 30 minutes before
serving.
- At the last minute thinly slice an
unpeeled cucumber and circle the plate with cucumber twists.
- Serve with luncheon meats and
cheese.
