Four Seasons Salad Recipes

Ingredients :

1 lettuce, preferably cos or Continental variety

250g cherry tomatoes or larger tomatoes cut into 8

12 button mushrooms, halved

1 medium cucumber, cubed

125g cottage cheese, crumbled

1/2 clove garlic, crushed

30g parsley, chopped

2 tbsp low oil Vinaigrette Dressing

Method :
  1. Wash lettuce well and tear into bite sized pieces.
  2. Place in the bottom of a salad bowl.
  3. In a separate bowl, gently toss together all remaining ingredients, except dressing.
  4. Pile salad ingredients on to the lettuce.
  5. Just before serving, pour over the dressing and carefully toss the salad.

To store - Prepare and eat on the same day.
