Method :
- Cook potatoes until tender, cut
into bite-size pieces.
- Combine cream, wine, mustard,
sugar and chives in a blender of food processor for 30 seconds.
- Place vinaigrette in a large bowl,
add potatoes, pecan nuts and apricots, toss well.
- Arrange on a salad place with the
watercress and serve.
