Method :

Cream the butter, sugar, orange rind
and vanilla until light and fluffy.

Add the eggs one at a time, beating
well after each addition.

Stir in the dates, almonds and mashed
pumpkin; mix well.

Add a little of the sifted flour, then
some of the milk and stir into the mixture.

Continue to do this until all the
ingredients have been used.

Spread the mixture into a greased, and
lined 20 cm square cake tin.

Bake in a preheated moderate oven
160C/325F/Gas 3 for 1 hour or until cooked when tested with a cocktails
stick.
The addition of rich, nourishing dates adds on
extra dimension of sweetness to this vegetable based bake.
