raising flour
1/2 tsp
salt
1 tsp
cinnamon

caster sugar
40 g
walnuts, chopped
2 medium
ripe bananas
1 Grade 3
egg, well beaten
25 g
butter or margarine, melted
2-4 tbsp
milk |
Method :

Grease and line 450 g oblong loaf tin.

Sift flour, salt and cinnamon into a
bowl.

Toss in sugar and nuts.

Mash bananas finely.

Mix thoroughly into dry ingredients
with beaten egg and melted fat, and enough milk to form a fairly stiff
mixture.

Spoon into prepared tin and bake for 1
hour in the center of the preheated, oven 350F, Gas 4.

Turn out and cool on a wire rack.

Slice when just cold.
A spicy cake cum bread, ideal for
teatime, sliced and spread with butter.
