Combine the butter and sugar in a mixing bowl. Stir in the banana, lemon juice and eggs and mix
well. Sift together the flour, baking powder, baking
soda, salt and nutmeg in another bowl. Combine the mixtures, stirring until the flour is
just incorporated and then stir in the pecans. Line a 8" square microwavable baking dish with
wax paper. Pour the batter into the dish and microwave on
high 100% for 7-9 minutes until a toothpick inserted in the center
comes out clean. Rotate the dish a quarter turn every 2 minutes of
cooking time. Remove the bread from the oven and let it rest in
the pan for another 5 minutes. Turn the bread out onto a wire rack and let it
cool for 10 minutes. Peel off the wax paper and cut the bread into 16
squares.
Makes 16 2-inch squares
This excellent bread is cooked in just
eight minutes. Spread thinly with butter, the squares make a delicious
snack served with a glass of cold milk.
Cooking Tip -
Bake quick breads in the microwave in dishes lined with
wax paper. This prevents them from becoming soft on the bottom.
