Peel, seed,
and grated the cucumbers. Place them in a mixing bowl with the red
onion. In a blender, combine the tofu, lemon juice, garlic, soy sauce,
salt, coriander, cumin and cayenne. Blend until completely smooth then
pour over the cucumbers and mix well. Transfer to a serving dish and
chill 2 to 3 hours. Garnish with fresh cilantro and serve with Crisp
Pita Chips.
This easy to
prepare dip can also double as a sandwich spread.
