Capsicum Surprise Recipes

Ingredients : |
4 red
capsicums
30g butter
garlic,
optional
2 large
tomatoes
1 onion
salt,
pepper
60g brown
rice, cooked
basil,
coriander, marjoram
whole meal
crumbs |
Method :
- Cut the top off the capsicums,
de-seed and hold under a tap of wash out any remaining seeds.
- Drain and stand in a buttered 0.5
liter casserole.
- If using garlic, now is the time
to rub it gently around the inside of the dish.
- Mix chopped tomato, finely chopped
onion and salt and pepper together with the rice.
- Add a dash of herbs and fill each
capsicum, tamping it down, as the stuffing sinks in cooking.
- Top liberally with breadcrumbs,
dot with butter and bake 45 minutes in a oven.
- Serve with pork or mutton chops
and creamed potatoes.
