Method :
- Add the beans to a saucepan of
boiling water, return to the boil, then boil for 3 minutes.
- Drain well.
- Heat the butter in a saucepan and
add the tomatoes, beans and seasoning.
- Cover the pan and simmer gently
for 10 - 15 minutes, until the beans are tender.
- Tip the beans and tomatoes into a
warm serving dish and sprinkle over the chopped tarragon.
- Serve hot as an accompaniment.
Serves 4
Note :
Young runner beans should not have
"strings" down the sides, but older ones will and they should be removed
before cooking.
Cooking Tip :
French beans can be used instead of runner
beans, but reduce the cooking time slightly.
