large onion, peeled and chopped
cucumber, sliced thinly
hard-boiled eggs
chopped spring onions, to garnish

lemon juice or vinegar |
Method :
- Blanch carrots in boiling water
for 2 minutes, drain.
- Slice beans diagonally.
- Blanch 2 minutes, drain.
- Blanch bean sprouts, cabbage and
onion for 1 minute, drain well.
- Toss vegetables together.
- Arrange on a platter with cucumber
and sliced eggs, set aside.
- Combine all sauce ingredients.
- Process in a food processor until
mixture is thick and smooth.
- Drizzle sauce over vegetables.
- Garnish with spring onions.
