Classic Potato Bake Recipes

Ingredients : |
4 medium
potatoes, scrubbed clean
1 small
onion, finely sliced
500ml
skimmed milk
2 tbsp low
fat yoghurt
good pinch
of dry mustard
ground
black pepper
2 hard
boiled eggs
1 tbsp
parsley, chopped |
Method :
- Slice potatoes, without peeling,
into 1 cm (1/2") slices.
- In a casserole, arrange the slices
in overlapping layers.
- Scatter over the sliced onion.
- Combine the milk, yoghurt, mustard
and black pepper.
- Pour over the potato.
- Cover and bake in a preheated oven
for 30 minutes, or until the potato is tender.
- Slice the hard boiled eggs and
arrange on top of the potato.
- Sprinkle with parsley before
serving.
You can serve this dish hot or cold.
