Tomato and Onion Filling Recipes

Ingredients : |
1 small
onion, finely chopped
2 tbsp
water
1 medium
tomato, chopped
1/2 tsp
fresh chopped basil or oregano, or good pinch of dried
ground
black pepper |
Method :
- Heat the water in a frying pan,
add the onion and sauté gently until transparent.
- Add tomato, fresh or dried herbs
and black pepper.
- Simmer till tender. Set aside.
- Slice off the tops of the baked
potatoes.
- Using a tsp, carefully scoop out
enough of the potato flesh to leave a firm shell.
- Combine the potato flesh with the
tomato mixture.
- Spoon back into the potato shells.
- Reheat in oven for about 5-10
minutes.
- Serve immediately.
