Rice and Leeks Recipes

Ingredients : |

leeks, trimmed and washed
olive oil
long grain rice
tomatoes, peeled and coarsely chopped
brown sugar
boiling water
freshly ground black pepper, to taste
squeeze of lemon juice |
Method :
- Slice leeks into 3cm sections,
crosswise.
- Heat oil in large fry pan.
- Add leeks, forking through to
break layers.
- Cook, stirring occasionally, for 5
minutes.
- Add rice, mix through.
- Fry, stirring occasionally, until
rice is opaque.
- Add tomatoes, sugar and seasoning.
- Pour in water.
- Cook gently, covered, until all
liquid is absorbed and rice is tender.
- Add more water if necessary.
- Sprinkle with lemon juice to
serve.
