Method :
- Wash unpeeled onions and place in
a bowl.
- Mix half the salt with half the
water.
- Pour brine over onions to
completely cover them.
- Weight with a plate to ensure
onions are totally immersed.
- Leave for 12 hours.
- Drain and peel onions.
- Place in a clean bowl.
- Mix remaining salt and water
together.
- Pour over onions, cover and leave
for 24 hours.
- Drain and wash onions, pack into
sterilized jars, leaving plenty of space at top.
- Place vinegars, sugar,
peppercorns, allspice, cloves and cinnamon stick in a saucepan.
- Stir over low heat till sugar
dissolves.
- Bring to the boil.
- Reduce heat and simmer for 5
minutes.
- Strain mixture through a fine
sieve.
- Pour over onions until it comes at
least 1cm above them.
- Seal, label and leave for 3
months.
- Serve with salads, antipasto or on
sandwiches.
