Tarragon Mushrooms a la Grecque Recipes

Ingredients :

button mushrooms

chopped fresh parsley

chopped fresh tarragon

cloves garlic, crushed with a pinch salt

tomato, peeled, seeded and chopped

water

olive oil

bay leaf

juice 1 lemon

freshly ground black pepper, to taste

Method :

Wipe mushrooms and trim stalks. Place in heavy-based saucepan with parsley, tarragon, garlic and lemon juice. Add tomatoes to the pan with remaining ingredients. Bring to the boil. Cover and simmer gently for 8 minutes. Serve hot or chilled, with crusty bread or as an accompaniment to barbecued meats.
