Method :
- Wash spinach well, place in large
pan with about 2 tbsp water.
- Cook until tender - about 5
minutes.
- Drain well, rub through a sieve or
puree in a food processor.
- Set aside.
- Melt butter in a saucepan, sauté
onion until soft and transparent.
- Remove pot from heat.
- Stir in flour, blend in stock and
milk off heat.
- Return to low heat, stirring
continuously until mixture boils and thickens.
- Stir in spinach puree, nutmeg and
seasoning.
- Heat gently.
- Serve immediately with bread
rolls.
