Method :
- Mix the flours with garlic, garam
masala, salt, chili powder and water.
- Beat until smooth and light.
- Cover the bowl and set aside for 1
hour or longer.
- Peel the potatoes and cut into
very thin round slices.
- Soak in cool water.
- Slice the brinjal thinly.
- Peel the onions and cut in halves
lengthways, then into thin slices.
- Separate the cauliflower segments.
- Heat oil in a frying pan.
- Dip individual pieces of vegetable
in the batter, allow any excess to drip off, and fry, a few at a
time.
- Serve warm with a chutney.
