Method :
- Peel and seed the pumpkin and cut
into pieces.
- Heat the oil in a saucepan and
gently fry the lentils, mustard seeds and curry leaves until the
lentils are golden and the mustard seeds pop.
- Add garlic and fry for another
minute.
- Add the ground spices and stir
well.
- Put in the pumpkin and enough
water to just cover the vegetable.
- Add salt, cover the pan and simmer
until the pumpkin is half cooked.
- Sprinkle in the coconut and cook
until pumpkin is tender.
Serves 4 - 6
Desiccated coconut can be used if fresh
coconut is not available.
