Method :
- Put the stock into a pan.
- Add finely chopped onion, pepper
and parsley.
- Bring to the boil, cover and
simmer for 15 minutes.
- Wash the wild rice very
thoroughly.
- Add to the stock, cover and simmer
for 40 minutes.
- Slice the mushrooms thinly and add
to the soup with the wine.
- Season to taste.
- Cover and simmer for 15 minutes.
- Serve hot.
Note :
Wild rice is extremely expensive but a
little may be used to give flavor and texture to clear mushroom soup.
