Method :
- Make a well in the flour.
- Add the egg and milk to the well.
- With a wooden spoon gradually draw in the flour to make a smooth dough.
- Add corn and stir well.
- Heat the pan over medium heat and grease lightly with a paper towel or brush dipped in oil.
- When the pan is very hot, drop in tbsp of corn mixture.
- Allow to cook for 2-3 minutes, or until golden brown underneath.
- Flip over to cook the other side.
- Repeat until all the mixture has been used.
Serve corn fritters with soup, as a vegetable accompaniment to a main course, or on their own.
