Method :
- Combine meal and flours with salt and baking powder and set aside.
- Whip the eggs briefly, add honey and melted lard.
- Make a well in the flour and add the egg mixture, incorporating in thoroughly.
- Spoon into hot buttered gem irons and bake for 15 minutes in a hot oven.
- These gems will rise beautifully through the addition of the light fluffy barley flour and will break easily to show their rich nutty consistency.
- Serve hot with honey for health.
