Method :
- Break cauliflower into florets.
- Wash and drain.
- Blanch by placing in a saucepan of
boiling water for 2 minutes.
- Drain and cool.
To prepare pickling mixture :
- Combine all ingredients in a large
saucepan.
- Bring to the boil.
- Cook, stirring continuously, until
sugar dissolves.
- Set mixture aside to cool.
- Place cauliflower in suitable
glass or earthenware container.
- Pour pickling mixture over it.
- Seal container.
- Label and store in a cool place.
- It should be ready to eat in 2-3
days.
