Grilled Asparagus with Walnut Sauce Recipes

Ingredients : |
2lb asparagus
Walnut sauce:
2 oz walnuts
2 large spring onions, very finely chopped
1 garlic clove, crushed
1 tsp grated lemon rind
1 tbsp chopped basil
1 tbsp chopped parsley
4 tbsp walnut oil
2 fl oz milk
1 oz vegetarian Parmesan cheese, grated |
Method :
- First make the sauce.
- Fry the walnuts in a dry frying
pan over moderate heat, stir, until toasted.
- Grind them with the spring onions,
garlic, lemon rind and herbs.
- Whisk in the oil and then the milk
to form a smooth sauce of a fairly thick pouring consistency.
- Brush the asparagus with oil and
place under a preheated hot grill for 5-6 minutes, turning
frequently until golden and tender.
- Transfer the asparagus to a warmed
gratin dish, pour over the sauce and then sprinkle over the cheese,
if using.
- Return to the grill for 1-2
minutes until bubbling.
- Ready to serve.
