pods, trimmed and cut into pieces

pimientos, drained and chopped

Method :
- Shake the cornstarch in a 14 by
20" microwavable cooking bag.
- Add the remaining ingredients,
except the cashews to the cooking bag and seal securely.
- Turn the bag to distribute the
ingredients.
- Make 61/2" slits in the
top of the bag and put it in a 12 by-8-by-2" microwavable baking
dish.
- Microwave on high 100% for 8-10
minutes, until the rice is tender.
- Rotate the pan one half turn
during the cooking time and manipulate the bag to mix the
ingredients.
- Sprinkle the cashews on top, if
you are using them, and serve.
Serves 6-8
Note :
Pea pods and pimientos contribute color
while the wild rice and optional cashews add crunchiness.
