Balti Courgettes Recipes

Ingredients : |
1 oz ghee
1 small onion, chopped
pinch of asafoetida (optional)
2 small potatoes, quartered
12 oz courgettes, sliced
1/2 tsp chili powder
1/2 tsp turmeric
1 tsp ground coriander
1/2 tsp salt
150ml water
1/2 tsp garam masala
chopped coriander leaves, to garnish |
Method :
- Heat the ghee in a frying pan, add onion,
fry 5 minutes, stir, until softened.
- Add asafoetida (if using), add potatoes,
fry 2-3 minutes.
- Stir in the courgettes, chili powder,
turmeric, coriander and salt.
- Add water, cover, cook gently 8-10 minutes,
until potatoes are tender.
- Sprinkle with garam masala, garnish with
chopped coriander.
- Ready to serve.
