Macaroni Zucchini (Courgette) Salad Recipes

Ingredients : |

zucchini (courgettes)
mushrooms, sliced
whole meal macaroni, cooked
thin cream
crunchy peanut butter
mayonnaise
lemon juice
honey
white vinegar
roasted peanuts |
Method :
- Wash and slice zucchini.
- Place on kitchen paper, sprinkle
with salt.
- Allow to stand 30 minutes, rinse
under cold water .
- Pat dry.
- Combine zucchini, mushrooms and
macaroni in salad bowl.
- Chill while preparing dressing.
- Place all remaining ingredients
except peanuts in a food processor.
- Process until smooth but not too
thick.
- Coat salad lightly with dressing.
- Chill well, serve garnished with
peanuts.
- Extra dressing will keep well in
the refrigerator.
