chokos
onion, peeled and chopped
stick celery, chopped
rice
vegetable stock
clove garlic, crushed
sour cream (optional)
capsicum (pepper), cut in strips
freshly ground black pepper, to taste |
Method :
- Peel the chokos, remove the hard
core and chop roughly.
- Place chokos, onion, celery, rice,
stock, garlic and pepper in a large saucepan.
- Simmer for 45 minutes.
- Cool and puree the soup in a
blender, or through a sieve.
- Return mixture to saucepan.
- Stir in the sour cream over low
heat.
- Do not allow it to boil.
- Serve hot with a dollop of sour
cream if desired.
- Garnish with capsicum strips.
